I made the most wonderful fritata for breakfast this morning. I mixed up my Medifast eggs and let them sit while I let the dog out to do his thang. I then chopped up about 1/2 cup of raw spinach and grated an ounce of fat free swiss cheese.I added a tad of smoked sea salt to it. I mixed everything together snd poured it into a hot mini skillet, turned the heat on simmer, put the lid on it and let my spoiled dog out again! I cooked it until it was firm, about 3 minutes and flipped it onto a plate. It was fluffy and fabulous!!!!! The bottom was slightly browned and looked jut like a fritata!..

I've never heard of smoked sea salt. I'll have to look for it. I use regular sea salt for everything...

Thanks for the great recipe, I didn't have spinach availaible so I grated some zucchinni in it. I wish I would have had a dab of ff sour cream to put on top..

This is a grate way to use the eggs, and I also have two spoiled dogs, and an even more spoiled cat. We should get a spoiled animal group started...

That sounds soooo much better than my breakfast. I made the Medifast eggs, and scrambled in a bit of meatless sausage. Yes, it was as disgusting as it sounds. Yuk, yuk, yuk. The "sausage" was made from a veggie protein and I wouldn't recommend it to anyone...

Sounds great, I sometimes use a little Egg Beaters (egg whites) and add to the scrabbled eggs just for a little better consistancy. I mix mine up the night before and place in the fridge over night. It really helps the flavors blend well and the scrabbled egg mix to really disolve, I'm gopnna have to try the spinach and swiss cheese...

Does the Swiss Cheese count as a condiment or a fat serving???..

I use fat free swiss so it counts as an oz of lean. It's so worth the oz!..
