I agree with PK. I make one cup (which even comes out to a lot) and mix in some leftover meat. Add veggies and you have a great omelette...

I split it. Lunch and dinner... but even then I short it and use a little cheese to even out the lean. So much food! haha..
Here's what I enjoy doing with egg beaters - in this case, Medifast hs approved the fat free feta because this brand is on par carb-wise with regular cheese - generally fat free cheeses are not recommended because they are higher in carbs..
Frittata, with Spinach, Green Bean, and Feta.
(makes 1 lean, 3 green, 2.08 condiments, 1.5 healthy fats).
1c egg beaters (1/2 lean).
1.5 oz President fat free feta (1/4 lean).
1.5 oz diced boneless skinless chicken breast (1/4 lean).
1 cup chopped frozen spinach (2 green).
1/2 cup French cut green beans (1 green).
1 tbsp chipotle Tabasco (1/3 condiment).
1/8 tsp chipotle Mrs. Dash (1/2 condiment).
1/8 tsp onion powder (1/4 condiment).
1/8 tsp garlic powder (1/2 condiment).
1.5 tsp olive oil or canola oil.
Cooking spray (up to 1 condiment).
Mix all ingredients, except oil and cooking spray. Coat nonstick pan with the oil, and heat pan and oil on medium heat. Add the mixture, spreading it evenly in the pan. Cover and cook until the egg beaters are set, and the bottom of the frittata is golden brown. Slide out onto a plate, and spray the pan with cooking spray for 5 seconds. Carefully invert the plate over the pan, putting the frittata back into the pan. Recover, and cook until the other side is golden brown...
Tried the egg beaters today with mushrooms, tomatoes, Low fat cheese, and asparagus..
Not a big fan of the egg beaters - too rubbery for me. And YES it was way too much to eat..
I'll save the egg beater for when I am desperate, lol...
I felt the same way on my first egg beater's day! It was enormous and I had difficulty eating it all...
I had the Southwestern Egg Beaters last night and it was delish! The nutrition info is the same as regular egg beaters...
Have you tried just egg whites? still makes a ton but they aren't rubbery at all...
I like to do the real eggs + egg beaters. Made a really great omelet with 1 egg, 1/4 cup egg beaters, some cheese and mushrooms and tomatoes. Even that was a HUGE omelet that I could hardly eat! And yummy..
I made the mistake of making the egg beaters for dinner my first day OP, I was SHOCKED!!! I couldn't eat all of it, it was just way to much! I have a hard time eating all of any L&G meal, it is more food than I could ever eat. I have to start planning ahead and splitting them up...
Is it two cups of uncooked egg beaters? I have stayed away from the egg beaters because of not understanding how much to start with?..

I've tried two cups of egg beaters a couple of times, but it was a little bland for me. I'm gonna try the part egg beaters part real eggs and part egg beaters part other protein and see which I like better...
I do 1 cup eggbeaters and 3 MSF links. Or do 1 cup eggbeaters and 2 oz cheese. Or....The possibilities are endless!..
