Okay, here goes. It's ridiculously simple but I just tried two variations and they both worked. Ready??? ARE YOU READY??? (the crowd roars!!!).
Variation 1: You can use this for taco shells, tostada shells, etc. It will count as part of your Lean, but you'll have plenty Lean leftover to stuff or top it..
1/3 to 1/2 cup LF shredded cheddar cheese.
Non-stick skillet (no spray or anything needed on it).
Heat the skillet, briefly, on stovetop set to med-high (I have an electric range and I set it at 7, which is out of 10 settings). The cheese will begin to melt and bubble and start to resemble lace. BE PATIENT! I think I let it bubble for 2-3 minutes, at least..
Use a non-stick spatula to gently lift the edges to judge how brown the underside becomes (surprisingly, not one of my experiments burned), but do not remove it from the heat until all the cheese is completely melted and the bubbles become less active..
Remove pan from heat and, be carefulHOT! To form a "taco shell" shape, cool by laying over a rolling pin or the side of a large bowl..
As it cools, it becomes crunchy. It will be a little "greasy," though, so I suggest holding it with a napkin when eating, or wrapping the lettuce on the outside of the shell. Use your imagination.
Okay, variation 2, which I really liked, will be in the next post (is there a limit to the length of these posts?.
Variation 2: Try this as a pizza crust!.
1 sliced round of deli-style LF provolone cheese.
Place the slice of cheese on the plate and place in microwave oven. Cook for 1 to 1 1/2 minutes, depending on your microwave. The cheese will bubble and eventually begin to brown..
When bubbles are less active, and the cheese has browned, remove plate from microwave. Let the cheese cool on the plate. This results in a really crunchy "crust" that you can top with plan-friendly pizza or tomato sauce and other fixings. Just be sure to adjust your Lean to account for the cheese..

I use the microwave method, and gently lift them off the plate with a butter knife, letting it hang over the knife until hard (just a few secs). My kids LOVE these! I can say that I've tried other cheeses, but none hold up as well as the Provolone, and it has the best flavor also...
The cheese "tortillas" sound wonderful. Suzanne Soimmers has plenty of recipes like that in her books. What a great idea. I never thought of incorporating similar plans with the L&G here!.
