Medifast recipe for Reco for Cambodian dish: Eggplant with Pork and Shrimp?

Ok, I know, why Cambodian.....well because I was DESPERATE for that Asian kind of sweet but not Vietnamese or Thai taste.

So:.

Makes 4 servings.

Smoke 1.5 lbs of eggplant on a BBQ grill or in the oven (about 15-20 minutes, turning 2 times). Let cool and then peel off outer skin. Chop into hefty 1-2 inch chunks.

Squeeze 2 limes over eggplant chunks and let marinate for 4 hours or as long as overnight at room temperature..

Brown 1/2 lb lean ground pork in PAM coated or non stick skillet. Drain off any fat (DO NOT use pork sausage). During browning, add 3 cloves crushed garlic and stir into pork..

Add one packet Lee Kum Kee brand Sauce of Spicy Garlic Egg-Plant.

Add 1/3 c water and stir in well.

Add 1/2 lb very small cooked and deveined shrimp ("salad shrimp")..

Heat for 3-5 minutes, covered..

Nuke (microwave) room temp eggplant in lime for 2 minutes. Layer pork/shrimp mixture over eggplant.

Add 2 fresh chopped green onions and 1/4 cup fresh chopped cilantro in layer over the pork/shrimp mixture..

EAT!!!!!.

It turns out to be about to be about 230 calories per serving but it satisfies a multitude of cravings...

Hi Gatita-.

I work near Chinatown in Oakland so it was just in one of the grocery stores. However, you can also their products at the stores listed on their website: http://usa.lkk.com/Common/locator/locator.aspx.

This sauce is KILLER for eggplant. Pre medifast I would occassionally eat at a Cambodian Restaurant in Oakland called Battambang (on Broadway) and this sauce plus the lime juice comes VERY close to their dish (heaven), but without the oil, and I eat it without the rice. I too have a THING for eggplant and I love to grill it whole on the BBQ so it gets all smokey and you don't have to add any oil or anything to cook it. Yummmmm...

That's funny I sometimes go up to Oakland JUST to shop in Chinatown... (I live in Santa Cruz) ....I'll look for it!..

That's right, you are hella NorCal. They have it in SF Chinatown too. I think I saw it last at the grocery next to Victoria Bakery on Vallejo and Stockton. It's only about $.69 a packet and mmmmmgood...
