Cheesecake is a big weakness of mine...but this is much better than the real thing :-).

Oh my I love this. I thought about this for a week or two just be careful if you like cheesecake or key lime pie..this is goooooood.

I am no cook but this was sooo easy..

Basic ingredients.

2 8oz 1/3 less fat cream cheese.

1c splenda.

1c almond breeze or soy milk.

1/2c heavy whipping cream.

1 env knox unflavored gelatin.

1 key lime squeezed till it shouts help or about 6-8 small key limes.

1tsp vanilla.

How I made it:.

Warmed almond breeze, vanilla, 1/2 c splenda, and a little heavy cream in the saucepan with the knox gelatin until the gelatin dissolved then let set a couple minutes.

Whipped up the cream cheese, 1/2 c splenda, and lime juice in mixer.

Combined the two and whipped some more in the mixer.

Then poured the yummy mixture in two silicone bite size muffin pans...made that and then some...chilled for about two hours in fridge.

Makes 48 cheesecake bites.

1 key lime cheesecake bite has the following:.

30 calories.

27 fat.

1 sat fat.

<1 carb.

45 sodium.

Easy to overeat this one..I know I did it :-)..

Ummm....question for you..where does this fit into the Medifast plan?? Sorry, but it doesn't! Sounds good, but maybe for maintenace people only!.

I thought this was going to be a recipe that's a new use for one of the Medifast products. Or is it supposed to count as a part of my Lean & Green?..

Nope, sorry ladies on the lean or green issue. This is great and I have one lil bite a day because it has hardly any carbs in the bite size portions but I don't know if it is legal or not. I just know it tastes great. Almost too great...

I thnk this will work well with a shake or a pudding :-) gonna try it tonight...as long as the gelatin is legal....

I am in maintenance, so I am interested in this. But is that 27 grams of fat for each little bite??!! Ouch. Tell me you forgot the decimal and that is 2.7 ...

If ya use fat free cream cheese and light whipping cream that would come down alot. I am going to experiment with a pudding tonight and just exclude the whipping cream altogether. That little bite was so good I thought I died and went to food heaven...
