Here is my suggestion: Cut up cucumbers, tomatoes, green bell peppers, green onions and black olives. Mix with olive oil and red wine vinegar, salt & pepper to taste. Make sure you measure the olive oil so you know how much you are using. I've been fixing this and even my kids eat it!..
I make a salad with fresh broccoli florets, chopped red onion, shredded cheese, and crumbled bacon in a light dressing of ff mayo, red wine vinegar, salt & pepper ( a little of this dressing goes a long way) Toss and put in the fridge for a couple of hours before serving. It's probably not perfect Medifare but it's a picnic hit and I love it! Its better to have a bowl of this broccoli than a bowl of potato salad! You could probably add different veggies if you want and sometimes I throw in some sunflower seeds too...
I'd leave out the onions, peppers, and olives. There are probably a large number of kids who won't eat those things...
Here are the Medifast no no's: we can't have onion (well 1tbsp is a condiment), bacon, ff mayo, or sunflower seeds..
Do a little editing and you'll be fine though. good starter idea...
How about a chicken salad with chopped chicken, red peppers and any other veggies you like and Galeo's Toasted Seseame dressing? Yum! Kids adore that flavor of Galeos.
For grownups you could add curry powder...
I think she said the broccoli salad wasn't "perfect Medifare," so you're right - it's not totally on plan, but I also agree it's way better than potato salad, or macaroni salad, etc. And as for kids not liking it, you're probably not going to find a picnic where the kids like EVERY dish that's there - they go for the chips anyway..
I say, go for it - it sounds good. Maybe use turkey bacon? And maybe swap a galeos dressing instead of the mayo.

One of my favorite summer salads is almost Medifast friendly.
1 pkg cherry tomatoes.
1 can black olives.
5 mozzarella sticks (cut into bite-size).
Bernstein's Light Parmesan dressing.
Mix together and it's a great salad. Portion yours out to include 5 olives and just enough mozzarella for your lean and you're good!..
I made a tuna fish sandwich last night and I forgot how much I missed them!!.
I made my "bread" out of cream of broccoli soup..
1 pkg soup.
1/2 t baking powder.
Water to barely moisten.
Roll out on parchment paper and bake at 350 for 10 minutes..
(I fold the parchment paper over after I spray it with pam and that is how I flatten it).
1 3oz can albacore tuna.
1 hard boiled egg.
1 pickle spear.
1-2 T light done right Caesar dressing.
Season to taste..
Very good!! Then you could have a "sandwich" also! I would take the bread and tuna separately and put them together when you are ready to eat!.
Whatever you pick, have a great time!!.
I guess mine is more for you...but you could make regular sandwiches for them!..
Use approx. 4 cups shredded cabbage with a little onion grated in..
Salt and pepper to taste..
2 Tbsp. vinegar.
1-2 packets of splendra/stevia/etc. (adjust to taste).
Light Mayo or Miracle Whip - just make sure that the calories/carbs are equal to the salad dressing that we are allowed - and don't use any other salad dressing that day!)..
