I've done this before and I like them too. Just don't add any milk or extra water! That is where I made my mistake and they turned out really mushy...
The South Beach Diet version of "mashed potatoes" is really good!..
My family has enjoyed mashed cauliflower for years, we used to load them up with cream cheese and cheddar....I still love them Medifast style..
On the subject of cauliflower, I tried the "chinese fried rice" that was posted on here and really enjoyed it. No, it's not rice...but it was close enough. And it looks like I'm eating a plate of rice.
Okay, I'm making up a new Medifast ruleyou mention a recipe, you post a recipe!.
No fair to tease me!..
Here it is:.
I LOVE THIS!! I make it at least once a week..
Chinese Fried Rice.
1/2 head raw cauliflower, grated to make 3 1/2 cups.
3 green onions.
1 clove garlic, minced or 1/2 tsp garlic powder.
1/2 teas ginger.
3 Tbsp Soy Sauce.
3 eggs, beaten.
Cooked Chicken, Beef, Pork, Shrimp, Turkey any mixture, your choice.
In a wok or large flat skillet, heat enough oil to cover the bottom. Fry minced garlic (or garlic powder) with finely diced white part of onions for approximately 1 minute. Add grated cauliflower and fry for 4-5 minutes, stirring constantly. Add soy, ginger, diced green onion tops, and pre-cooked cubed meat or baby shrimp. Stir to mix well and brown a bit. Push mixture to one side of pan.
Stir eggs into rice mix and remove from heat. Stores and re-heats beautifully...
Yeah for Google..
This is what I found:.
4 cups cauliflower florets.
1 ounce butter flavored cooking spray.
1 fluid ounce fat-free half-and-half.
Pinch freshly ground black pepper.
Steam or microwave the cauliflower until soft. Puree in a food processor, adding the butter spray and the half-and-half to taste. Season with salt and pepper.
I imagine the fat free half-and-half makes it super creamy, as does blending it in a food processor. I am going to try it again this weekend!..
