I made these today, and are yummy. Mine were more like scones. They seemed to flatten out after baking. I thought maybe I didn't mix long enough. About how many minutes are you mixing with mixer? If this is normal that is fine they taste good so I will make them again. Thank you, DeeDee..
I made these over the weekend and they were delicious. Thanks for the recipe! I can't stomach the eggs on their own, so this was a good way to use them up. They did flatten out a bit after I took them out of the oven, but they are so yummy!..

THANK YOU! I made these yesterday and they were great, but had them for the second time this morning heated in the microwave and they were fantastic! I put a little cream Cheese on them and it was heavenly! I will be making these once a week for sure. I had to do peaches and cream oatmeal because that was all I had and it worked just fine. I bet the maple would be good too.

These sound fabulous!! Plan on making them this weekend... I'm brand new and am having a hard time stomaching the Medi meals, so hopefully this will help.
So if a serving is two muffins, how many Medi meals does that equal out to??.

Okay, so I tried these this morning. I only made 6 muffins total (cuz that's how big my muffin pan is!) and they turned out alright. Next time I'll try adding a little Splenda, cinnamon, and nutmeg to spice them up a bit! I also tried calculating out the nutrition info so that I could add them into my log as a private food. I think this is pretty close.

I made these last night and had them this morning. I think I overcooked them slightly because they turned out pretty dry. Nonetheless, they weren't bad. I ended up adding 1/4 tsp banana extract, 1/2 tsp cinnamon, 1/2 tsp salt, and 2 Tbsp Splenda, since I like my muffins a little sweeter. I used muffin liners and even sprayed the interior of them with Pam but they still stuck, so I wouldn't advice using muffin liners with this recipe. Anyway, I toasted them today, which helped moisten them up a bit. Definitely going to try this one again!..
