Flax seed and Medifast Eggs?

Since I left in Oct and came back today. I notice Flax seed now in some recipes and some references to the new eggs that Medifast put out.

Can anyone tell me the signifigance of the ground Flax seed, I notice them in muffin and shakes but what does it do to each?.

The affect of the Medifast eggs in Muffin recipes? I don't want to miss out on any great tasting ideas and could it be...fluffier muffins?.

The flaxseed adds fiber and gives the muffins a heartier texture. The eggs help them to rise a bit better. I love the adjustments. It makes the muffins much more filling and the flaxseed has a nutty kind of flavor...

I agree with Lib and Shauna and can support that fact that flax meal works! I developed a little problem after my doctor prescribed an iron supplement. It was surprising how that affected my digestive system. I saw flax meal recommended here and gave it a try. Build it up over a few weeks in soups, muffins/breads, and mixed into your veggies..

Bob's Red Mill is a good brand and available at many stores. As long as you are going to use a fiber product, it may as well have the extra nutrients (omega 3, Lignans) rather than just methylcellulose...

Keep in mind, flax seeds unground have no nutritional or fiber benefits, they must be ground to reap the rewards..

Once ground, Flax Meal (ground seeds) only keeps for about 2 week unrefridgeratedBest to buy whole seeds and grind a couple of days worth yourself. Keep ground + whole seeds in the fridge or even the freezer..

Aside from it's being a great source of soluble fiber, ground flax and flax oil are also a rich source of Omega-3 fatty acids (like salmon), also known as Alpha-linolenic more about it here:.

I added whole flax seeds to my Chocolate shake in my ultra blender the K-Tech. It tasted nutty and was ground to a whole wheat flour consistancy. Yummy.

Thanks for the tips girls. Especially about being ground. I might have tried to eat it like Sunflower seeds in my salad...

The eggs are great. I just ordered some and like them both as an omelet (with a little salsa on top) and in the "bread" recipe that uses the cream soups.

I made the bread for the first time yesterday at it was tasty and a good way to use up the cream of tomato soup that I don't like...
