Hi,.

Just tried this last night...unbelievable! Making it again today!.

CRISPY CHEESE CAULIFLOWER.

Olive Oil Spray.

2/3 cup grated Parmesan Cheese.

1/2 tspn ground cumin.

1/8 tspn cayenne pepper.

Salt and pepper, to taste.

1/2 large head cauliflower, broken into pieces.

2 eggs beaten, or egg substitute.

1/2 cup finely chopped parsley.

Preheat oven to 450*. Spray a cookie sheet with olive oil..

In a shallow dish, combine cheese, cumin, cayenne and salt and pepper..

Dredge cauliflower in egg, then in cheese mix. Put on cookie sheet, spray with oil..

Bake 15 minutes...remove to plate and sprinkle with parsley..

Serves 4...Per serving:.

124 calories, 11 g. protein, 7 g. carbs, 7g. fat (3 g. saturated), 118mg. cholesterol, 3 g.

WOW...that sounds sooooo good...how do you count that on your meal plan?I know it would be the green part....but do you use enough of the other to count as the lean?...wonder how this would work with a different cheese and broc?...hummmm..interesting....Later Prez..

This is such a great recipe! I love that it's different and you can adjust the spice amount. My kids love this and they're very picky eaters. Thanks for coming up with such great things!..
